HOW IT WORKS

Located within arm's reach of the cook kettle and pump/fill station. These insulated tanks provide refrigerated cold water reservoirs to stop the cooking process and start the rapid chill process by reducing the internal temperature down to under 40° F.

CHILLER FUNCTIONS AND FEATURES

  • Stops the cooking process of the hot food and provides continuous chilling of the food down to +40° F in (1) hour or less—for long-term refrigerated storage at +32° F.
  • The insulated open stainless steel reservoir provides an ice water (+34° F) immersion bath for hot (+180° F) kettle cooked pumpable foods after having been pumped into barrier casings at the pump fill station.
  • Designed for continuous chilling of one kettle after another with filled casings always in plain view. Linear load cycle is FIRST IN—FIRST OUT using gentle but complete heat transfer by circulating bubbler bath—without rotary impact.
  • Allows use of direct expansion air cooled refrigeration system with evaporative coils deep down inside the linear tank providing +34° F water reservoir.
  • Casings are removed along a linear path by a variable speed on-board conveyor and out of the tank by loading into containers for refrigerated storage or freezing.
  • Refrigeration systems are remotely located away from cook-chill production area and sized for on-demand usage. No ice builder is used or needed.
The chill system is built to U.S.D.A. and F.D.A. standards.
